The red Fitou, a full-flavoured velvet wine, belongs to the Appellation d'Origine Contrôlée (AOC) since 1948, the oldest Appellation in Languedoc.
The wines are cultivated in only very few municipalities in the coastal region between Narbonne and Perpignan as well as in the Corbière massif.
Nine months after the vintage the National Appellations d'Origine and the Syndicat Cru du FITOU make quality controls.
After these controls the wines comes onto the market, however, good wines matures 12-18 months.
